First, plants (herbs) not absorb * all * of light. Notice how when your walking in a forest there is still light, is the light that passes through the leaves of the trees above, however, will probably notice that the light seems a bit "cold" or bluer than the normal sunlight. That is because leaves absorb more of the red-blue light and therefore the shade of the canopy is high in blue wavelengths. Anyway to answer your question, Grass is green at night because there is still light, composed of various wavelengths (one is green) is reflected in the lawn. Night time on earth does not mean a total absence of light, it is only much lower levels.
